Easy Apple Pie

My dad loves apple pie and custard, so for Fathers Day I just had to make him his favourite! I remember back in school in cooking class, apple pie was always one dish they’d make! Really took me back but I added a secret ingredient.. maple syrup! Yum!

Strawberry Cheesecake

Another one I made for father’s day. Cant go wrong with a no bake cheesecake. Strawberry and vanilla cheesecake – yum! If you’re not a baker or a regular in the kitchen, this is perfect for you. Minimal effort, maximum effect.

Mood: In need of something sweet and feel good (Strawberries are a good mood food!)

Courgetti with Spinach Pesto and Mushrooms

This recipe was inspired by a pasta salad I had recently from Aldi, it included spinach in the pesto recipe so I thought I’d give it a go and make my own. The idea was to have it for lunch and I wanted to make it a little lighter so I went for courgetti instead of pasta!

It’s a brilliant recipe for a low carb lunch option.

Double Pepperoni Puff Pastry Pizza

Tongue twister or what! We love a puff pastry pizza because they’re just so simple to make and so tasty! They’re a perfect fakeaway option with minimal effort.

Bulgar Wheat Salad with Chicken & Feta

I love bulgar wheat, it’s a great alternative to rice, similar to cous cous but in my opinion bulgar wheat is much nicer! You cook it the same way as you do cous cous and then just add whatever you like to it. I like to have this for lunch, but you can also pair it with salmon for a healthy dinner option. Or leave out the chicken and have it as a veggie side dish for your next BBQ (if we ever see the sun again!)
