Quorn Keema (v)

Traditionally this is made with lamb mince but we love the Quorn alternative! Plus its healthier. You can make wraps, or keema toast (yum!!) or just eat it with roti.

Mood: In the mood for something healthier but still packs so much flavour!

INGREDIENTS:
– 1 bag of Quorn mince
– 2 tsps of vegetable oil or a third of butter
– 1 cup of peas
– 1.5 white onions (diced)
– Half a tin of chopped tomatoes (blended)
– 1 tbsp garam masala
– 1 tbsp cumin seeds
– 1.5 tsp turmeric
– 1 tbsp fenugreek leaves
– 1 tsp fenugreek seeds
– 1 tsp ground coriander
– 1 tsp Salt
– 4 cloves of garlic
– 1.5 tbsp chopped ginger
– 3-4 green chillies, chopped thoroughly – to your taste

METHOD:
1. In a pan, heat your oil or butter with the cumin for around 30-40 seconds
2. Add the onions and cook until they start to slightly brown
3. Add the ginger and garlic, cook for 2-3 minutes
4. Add the blended chopped tomatoes and cook for a 8-10 minutes
5. Add the chillies, mix well
6. Add the salt, turmeric, garam masala, fenugreek (seeds and leaves) and coriander
7. Cook for 5-7 minutes and mix often
8. Add the Quorn mince and cook until soft
9. Add the peas, cover and cook for 10 minutes
10. Once cooked thoroughly, mix in fresh coriander and serve
