Wild Garlic Pesto, Mushroom & Asparagus Spaghetti

This one is a quick and simple vegetarian option. If you don’t have wild garlic pesto you can make your own with basil or buy a jar at your local supermarket.

Mood: When you want a light, summery veggie option


2 tbsp of wild garlic pesto (or normal pesto)

1 clove if garlic (finely chopped)

1 handful of mushrooms

1 pack of asparagus


1 tsp of oil

Handful of pine nuts (optional)

Parmasan to serve


1. Boil the pasta to packet instructions (enough for 2 portions)

2. Chop mushrooms then boil the asparagus until only just soft, drain and set aside

3. Add the oil to the pan, once hot add garlic followed by the mushrooms and cook until they start to soften.

4. Chop the asparagus into pieces and add to the pan

5. Add pine nuts to separate dry pan until browned slightly

6. Add the wild garlic pesto, salt and pepper and mix well

7. Drain the spaghetti and then add to the pan and mix until well coated then add the pine nuts

8. Drizzle with a bit of chilli oil, shave a bit (or a mountain in my case) of parmasan and serve
